About Us

Foolish Craig's Cafe was established in 1998. While we are continually changing, one constant is that every day we strive to become a better place for our customers and staff. Owner-operators, Foolish Mitch and Just Craig, welcome any comments and suggestions on how to create a better experience for you. We couldn't have done this without you and the incredible support of our amazing wives, Michelle and Kim (who we both met at Foolish Craig's)! 

Our award-winning bread is made fresh daily in our baketuary. From slow braising our corned beef and pork shoulder, to making our soups and dressings in-house, our goal is to serve the best, tastiest food possible. Virtually every item on our menu from the crêpes to the desserts are made to order. 

Colorado fresh produce and meats are used whenever possible. Some of our local suppliers include Red Bird Chicken, OZO Coffee, Morning Fresh Dairy, Sherpa Chai, and Polidori Sausage. Most of our beers are hand-picked from local microbreweries. 

In our effort to become a zero-waste facility, we recycle everything we can, including the help - they just keep coming back!
